This is an easy recipe for Mexican Crema. Just remember that you need it to sit overnight. Spoon it on tacos, enchiladas, steak, pork, or chicken. You may even use it on your salads. Drizzle some over your bowl of soup. It’s extremely versatile – and tasty!

Ingredients:

  • 1 cup HazelCream – double strength (so only 16 oz of water)
  • 1 Tbs vinegar (apple cider or white)
  • 1 Tbs lime juice
  • Pinch salt

Blend

Add vinegar to Cheri’s HazelCream. Stir. Cover with plastic wrap and let sit over night. It won’t spoil because of the vinegar.

Prep Lime

Juice a lemon.

Add Ingredients

Add the lime juice and a pinch of salt to the HazelCream mixture.

Enjoy

Ingredients:

  • 1/2 cup Cheri’s HazelCream
  • 2 tsp white vinegar
  • 16 oz dairy-free yogurt
  • 1 1/2 cups vegan mayo (Best Foods)

  • 1 Tbs minced chives
  • 1 tsp Worcestershire

Buttermilk

Mix Cheri’s HazelCream with vinegar and let sit for 10 minutes.

Basic White

Mix the yogurt, mayo, and buttermilk together.

This is the recipe that started everything. Even though a big breakfast was a treat, white gravy was a wonderful addition. As I was experimenting recreating my favorite meals, gravy became a real challenge. How could something so simple be so difficult? After several failed attempts, my husband studied the almond milk label. He told me that all I was doing was pouring water into my gravy. So we created Cheri’s HazelCream. It’s a one-to-one milk substitute made from Oregon hazelnuts. Buy some today, and make some gravy!

  • 3 Tbs non-dairy butter

Butter

Melt the butter in a saute pan.

Flour

Add the flour, cook for at least two minutes.

Mise En Place

This is a perfect party treat. When it is hot, boy is it smooth; the perfect dip for tortilla chips, baked potatoes, or fresh veggies. Its a perfect way to use Cheriʼs HazelCream. This quick, wonderfully delicious dip is also good cold. All dairy free and gluten free. You will find so many uses for this versatile sauce for the whole family to enjoy.

Normally you add shred or cubed cheese at the end, but I’ve had problems with non-dairy cheese melting. So I’m adding Daiya cheese sauce. On its own it’s too thick, but it’s perfect when combined with Cheri’s HazelCream.

Combine butter and flour over medium heat, whisk continuously for 5 minutes. This is to cook the flour.

Add the Milk

Add Cheri’s HazelCream. Whisk until the sauce thickens. If you want the sauce a little thinner, add a little more.

Finish the Sauce

Turn the heat to low. Add the Daiya Cheezy Sauce. Stir until combined.

Medium sauce pan

Ingredients:

  • 3 Tbs extra virgin olive oil
  • 1/4 cup parsley
  • 1 onion
  • 1 carrot
  • 1 celery stalk
  • 2 garlic cloves
  • 1/2 cup fresh basil leaves
  • 1 sprig each rosemary, sage, thyme
  • 3 14-oz cans crushed tomatoes
  • 1 Tbs tomato paste
  • Salt & pepper to taste

Mise En Place

Gather all the Ingredients

Chop veggies

Small dice the onion, carrot, and celery. Finely chop the parsley.

Saute

In a sauce pan, heat the olive oil over medium heat. Add the onion, carrot, celery and parsley. Cook for three minutes. Add garlic, cook for another three minutes.

Add herbs

Chop the basil leaves. Add the basil leaves, rosemary, sage, and thyme. Stir for 30 seconds.

Add tomatoes

Add the remaining ingredients. Reduce to a simmer, cook uncovered for 10 minutes.

Finish

Remove the herb sprigs. Enjoy.

Keep it refrigerated for four days or frozen for three months.

Mise En Place

Gather all the Ingredients

Prep Ingredients

Cut the basil. The basil should be packed into the measuring cups.

If you are using ZellaFoods Hazelnuts, skip to step 5. They are already roasted and ready to use.

Roast

Roast the hazelnuts at 350F for 20 minutes. Let the nuts cool.

Remove skins

Roll the nuts in a kitchen towel to remove most of the skins.

Blend

Place hazelnuts, garlic, and basil in your food processor, then process until the texture is coarse.

Add Cheese

Add the Non-Dairy Parmesan Cheese and process until it is mixed in.

Add Oil

Slowly add the olive oil. while blending the mixture.

Finishing Touches

Add salt and vinegar to taste.
