Normally when I make pasta, I simply add a sauce and perhaps a kielbasa sausage. They are quick and I can heat them in the microwave. But this time I wanted something classic, spaghetti and meatballs. Gluten-free pasta of course, and plenty of substitutions in the meat balls. The dish turned out so well my husband said it reminded him of spaghetti when he was a child.

Ingredients:

Gluten-free spaghetti

Spaghetti sauce

Meat Balls

  • 1 lb ground beef
  • ½ cup Kikkoman gluten-free panko
  • ¼ cup Cheri’s HazelCream
  • ½ tsp salt
  • 1 tsp Worcestershire sauce
  • ½ tsp pepper
  • 1 Tbs Italian herbs
  • 1 onion, finely chopped
  • 1 Tbs Bob’s Red Mill Egg Replacer
  • 2 Tbs warm water
  • 4 oz Follow Your Heart Parmesan

Egg Sub

Preheat oven to 400F.

Mix egg replacer with warm water. Let sit for 10 minutes.

Prep Ingredients

Put all meatball ingredients into a bowl.

Add Cheri’s HazelCream

Just a quarter cup will do.

Prep Ingredients

Mix well, hands are a great tool.

Shape into Balls

1″ to 2″ is a nice size. Place on a lined baking sheet, don’t let them touch.

Cook the Meatballs

Cook for 20-25 mins depending on size. Remove from oven.

Prepare the Pasta

Follow the package directions. Using a saucepan can be a real time saver.

Prepare Sauce

Warm your pasta Sauce. It may be from a jar or scratch. See our Pizza Sauce recipe for ideas.

Combine

Combine sauce, noodles and cheese in the saucepan. Add 4 oz. of non dairy parmesan cheese, stir until melted.

Finish the Dish

Add the meatballs to the pan. Gently stir them in so they are covered with sauce. Enjoy!

Mise En Place

Gather all the Ingredients. Put water in the pot to boil.

Butter

Melt the butter.

Garlic

Add the minced garlic.

HazelCream

Add Cheri’s HazelCream, double strength. When you make it in your blender, only add half the water (16 ounces).

Finish Sauce

Add the non-dairy parmesan cheese. Whisk in the salt and pepper.

Mushrooms

Add the pasta to boiling water. Cook the mushroom slices in a dry pan – no butter or oil.

Tomatoes

Add tomatoes to the mushrooms and heat them.

Finishing Touches

Add the sauce to the pasta, mushrooms, and tomatoes. Enjoy!

This is the recipe that started everything. Even though a big breakfast was a treat, white gravy was a wonderful addition. As I was experimenting recreating my favorite meals, gravy became a real challenge. How could something so simple be so difficult? After several failed attempts, my husband studied the almond milk label. He told me that all I was doing was pouring water into my gravy. So we created Cheri’s HazelCream. It’s a one-to-one milk substitute made from Oregon hazelnuts. Buy some today, and make some gravy!

If you have a craving for onion rings, this recipe is gluten and dairy free. It makes rings that are slightly coated, it is not a thick batter. I use Walla Walla sweet onions when ever possible, and the light coating allows you to taste the sweetness of the onion. Serve with ketchup, or make a dipping sauce of vegan mayo and ketchup – with a dash or two of hot sauce thrown in.

Slice Rings

Slice the onion into rings. One onion makes a plate of rings.

Soak

Soak the rings in a ice cube water bath for one hour. After soaking, dry them with paper towels.

Buttermilk

Make buttermilk from Cheri’s HazelCream using 24 ounces of water. After blending for one minute add the vinegar. Stir this mixture and let it rest for 10 minutes.

3 Pie Tins

Put your buttermilk in one pie tin. In the second put the flour mixed with spices. Make it as mild or spicy as you like.

Fry

Dip each ring in buttermilk, flour, buttermilk, flour. A double dunk. Use the third pie tin for the ready to fry rings. Fry in small batches at 375F.

Enjoy

Put the rings on a paper towel to catch any grease drippings. Enjoy plain or with a dipping sauce.

This is a perfect party treat. When it is hot, boy is it smooth; the perfect dip for tortilla chips, baked potatoes, or fresh veggies. Its a perfect way to use Cheriʼs HazelCream. This quick, wonderfully delicious dip is also good cold. All dairy free and gluten free. You will find so many uses for this versatile sauce for the whole family to enjoy.

Normally you add shred or cubed cheese at the end, but I’ve had problems with non-dairy cheese melting. So I’m adding Daiya cheese sauce. On its own it’s too thick, but it’s perfect when combined with Cheri’s HazelCream.

Egg Substitute

Mix the ground flax seed and 3 Tbs water. Set aside.

Proof Yeast

Add the yeast to water and sugar. Be sure the water temp is between 90F and 110F. Let rise at least 10 minutes.

Mix Ingredients

Mix flax seed, oil vinegar and agave nectar. Then add the dry ingredients.

Finish Dough

Add Cheri’s HazelCream and yeast. Beat for 4 minutes.

Form Buns

Spray mason rings with non-stick spray. Use a 1 oz ice cream scoop to fill the rings. Level the tops with damp fingers or a spoon.

Proof Buns

Top with oive oil and sesame seeds. Cover and let rise for 30 minutes.

Bake Buns

Bake at 375F for 20 minutes. Cool on a wired rack.

This recipe originally came from a desire to make English sausage rolls. You need a good puffed pastry to make it work. In all my research and hunting I’ve yet to find a premade gluten free, diary free puff pastry. So I decided to try it for myself. While this doesn’t have all the flakiness associated with normal puff pastry, it’s close enough. It can be used for sausage rolls, hand pies, pin wheels and many more. Be warned that this is not a quick process. It takes six to eight hours, mostly chilling in the refrigerator, so I suggest that you make the pastry portion of your recipe the day prior to the rest of the recipe.

Mise En Place

Gather all the Ingredients, mix the Neat Egg with warm water.

Yeast

Add yeast to sugar and water. The water needs to be between 90F and 110F. Set aside for at least 10 minutes.

Dough

Mix together all the ingredients. Work the dough into a ball. Wrap it in plastic wrap.

Cool and Roll

Refrigerate for one hour. Roll the dough in all directions until you have a rectangle, approx. 14″ – 16″. Spread butter on the dough, then fold into a small square.

Repeat

Repeat the cool and roll process three more times.

The dough is now ready for the next step. Refrigerate over night or use right away. Use it for sweet or savory recipes.

This lemon cake has become a favorite of my friends and family. It is the ‘go-to’ birthday cake, and it rarely lasts a day. No one ever dubs it ‘that gluten free cake’ or ‘that egg free cake’ or ‘that milk free cake’, even though it’s all of the above. Don’t skip the step of sifting the confectioner’s sugar on the glaze, or you will get lumps. Still edible lumps, but not as pretty. If you haven’t heard about my HazelCream milk substitute, please check out our video for the super simple instructions. This product is designed to be a one-to-one milk substitute, and it really works!

  • 2 Tbs vinegar (apple cider or white)

Cake glaze

  • 1 ½ cups sifted confectioner’s sugar
  • 3 Tbs lemon juice
  • 1 Tbs lemon zest

Mise En Place

Gather all the Ingredients.

Stir together milk and lemon juice. Set aside.

Stir together baking soda and vinegar. Set aside.

Prep Ingredients

Whisk together flour, baking powder, salt in a large mixing bowl.

Oil & flour the bundt pan.

Preheat over to 350F.

Combine 1

In an electric mixer, whip butter and sugar for 6 minutes.

Add in vanilla & lemon zest.

Combine 2

Add apple sauce, mix.

Add half the flour mixture, mix.

Add soda and vinegar, mix.

Add remaining flour mixture, mix.

Combine 3

Add milk and lemon juice, mix.

Do a final mix until batter is smooth.

Pour into pan, smooth out the top.

Baking

Baking time varies depending on your pan:

Small loaf pan – 30 mins

Large loaf pan – 75 mins

Bundt pan – 60 mins

The cake is done when a toothpick comes out clean.

Cool

Gently remove cake from bundt pan.

Let cool.

Icing

Whisk together icing ingredients.

Pour over cake.
